Ingredients
- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 sweet potato, peeled and diced
- ยฝ cup fresh or frozen green beans
- 3 cups beef broth
- 2 cups water
- 1 (8 oz) can Rotel tomatoes (with green chiles)
- 1 (16 oz) can diced tomatoes
- 2 medium carrots, peeled and sliced
- 1 red bell pepper, diced
- 1 can corn, drained
- 1 teaspoon garlic salt
- ยผ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1.5 teaspoons Italian seasoning
- ยผ teaspoon red pepper flakes (optional for a kick)
- 1 tablespoon ketchup
- ยฝ teaspoon salt (adjust to taste)

Instructions:
Step 1: Cook the Ground Beef
- In this recipe, we will need a large pot or Dutch oven. First, cook the ground beef over medium heat until browned. Break it apart with a wooden spoon as it cooks. Once done, drain any excess fat.
Step 2: Sautรฉ the Aromatics
- Then in the same pot, add the diced onion and minced garlic. Next sautรฉ for 2โ3 minutes until fragrant and softened.

Step 3: Add the Vegetables
- Then add a can of Rotel tomatoes and a can of diced tomatoes. Stir together and let cook for 2 minutes.

- Next stir in the diced sweet potato, green beans, carrots, red bell pepper, and corn. Cook for 5 minutes, stirring occasionally, to let the vegetables begin to soften.
Step 4: Build the Soup Base
- Then add the beef broth, water, Worcestershire sauce, ketchup, garlic salt, black pepper, Italian seasoning, and red pepper flakes (if using). Stir well to combine.

Step 5: Simmer the Soup
- Then bring the soup to a gentle boil. Reduce the heat to low, cover, and simmer for 20โ25 minutes, or until the sweet potatoes and carrots are tender.

Step 6: Taste and Adjust
- Taste the soup and adjust the seasoning with additional salt or pepper if needed. Remove from heat.
Step 7: Serve and Garnish
- Finally, ladle the soup into bowls. Garnish with fresh parsley and a sprinkle of grated Parmesan cheese, if desired. Serve hot with a side of crusty whole-grain bread or crackers.

Directions
- Brown the hamburger meat in a large pot or Dutch oven. Add chopped onion and garlic and let cook until the onion is translucent. Drain fat from hamburger.ย
- Add a can of Rotel tomatoes and a can of diced tomatoes. Stir together and let cook for 2 minutes.ย
Add the sweet potato, red pepper, carrots, and green beans.ย - Then add the beef broth, water, garlic salt, pepper, Worcestershire sauce, Italian seasoning, red pepper flakes, ketchup, salt, and pepper.
- Bring to a boil and then simmer for 35-40 minutes or until the vegetables are tender.ย
Add corn after 25 minutes.ย - Serve with fresh parsley and parmesan cheese if desired.
